Baking Tips
Small habits that make a Big difference!
A few tried-and-true tips to help every batch
come out of the oven just right.
Bring Butter & Eggs to Room Temperature
Cold butter and eggs don't blend as smoothly into batter or dough.
Set butter out about 45-60 minutes before you start for a smoother mix and more even bake.
Short on time? Microwave the butter for 10 seconds to soften it slightly, without melting.
For Cookies, be careful not to over-soften or melt the butter, as this can cause cookies to spread and flatten.
Melt Butter for Thinner, Crispier Cookies
Melted butter creates a thinner dough that spreads more as it bakes.
For cookies with crisp edges and a chewier center, melt the butter and let it cool for 5–10 minutes before mixing with the other wet ingredients.
For thicker, softer, fluffier cookies, use softened butter instead.
Chill Dough for Thicker Cookies
Refrigerating cookie dough for 30-60 minutes before baking reduces spreading and creates thicker, chewier cookies with richer flavor.
This is especially helpful if your butter is too soft or your dough feels warm and sticky.
Freeze Cookie Dough For Later
Cookie Dough freezes beautifully! You can always mix it up and freeze until it's time to bake!
Either pre-portion your dough into balls before freezing,
or freeze the entire batch and let it thaw slightly before portioning into balls.
Just let frozen cookie dough sit out at room temperature for 20-30 minutes & Bake!
Mix Until Just Combined
Once your wet ingredients are fully mixed, Just Add the dry ingredients and fold them in, just until everything comes together with no dry streaks remaining.
Overmixing develops the gluten in the flour, which can leave baked goods tough and dense instead of soft and tender.
Know Your Oven
Every oven is unique, so our baking instructions are intended as a solid starting point.
Small adjustments to baking times, temperatures, or pan types and sizes
may help you achieve your perfect bake.
Don't be afraid to trust your oven and your instincts and bake to your preferred results!
Line Your Pan
Parchment paper or a silicone baking mat prevents sticking, makes cleanup effortless, and allows brownies and blondies to lift right out for clean, even slices.
Keep in mind that buttered or greased pans can add increased surface temperatures, resulting in a crispier bottom and/or edges, so small adjustments to baking times or temperatures when using different methods may be advised.
Prepare your pan accordingly for your desired result!
Check for Doneness a Few Minutes Early
Cookies should look slightly underbaked in the center with golden edges when removed.
They'll continue to set on the hot baking sheet.
Brownies and Blondies are ready when a toothpick inserted near the center comes out with a few moist crumbs, not wet batter, but not completely clean.
Bake to Your Preference
With baked goods, just 1-3 minutes can make a world of difference!
For soft, chewy cookies or rich, fudgy brownies, slightly Under-Bake.
Remove from the oven just before they look completely done. They'll continue to set as they cool, helping keep the centers soft and moist.
For crispier, firmer cookies or cakier brownies with crisp edges, Bake until centers are Just Set.
Bake an extra minute or two until the edges are visibly golden or crisp and the centers are just starting to set.
Let It Cool Before You Cut
As tempting as they are, Let brownies and blondies cool for at least 10 minutes before slicing.
Allowing them to cool helps the texture set, making each slice cleaner, neater, and easier to remove from the pan.
Store in an Airtight Container - If There's Any Left!
Store your freshly baked treats in an Airtight Container at room temperature for up to 3-5 days.
Make sure they're completely cooled before storing to prevent moisture buildup.
This helps preserve their freshness, flavor and texture for longer.
